Paleo Chicken Fried Rice

I percent lunch for my daughter each day all through the college year & i love to ship a hot lunch whenever viable. She receives tired of salads, particularly inside the iciness. AIP Paleo chicken Fried Rice is one that she certainly loves & i really like that it’s healthy!


I p.c. her lunch in a thermos like this. It keeps her meals heat till lunch. a touch trick is to place hot water inside the thermos even as you're warming up the dish. It maintains it heat for hours!

Ingredients

  • 1 lb organic chicken breasts (or thighs)  (cut into cubes) I personally like thighs  (or leftover cooked chicken just skip step 1)AIP Paleo Chicken Fried Rice is a Quick, Easy & Delicious One Pan Dish that is healthy too! Pack leftovers in a thermos for a hot lunch! 
  • 1 head of cauliflower (riced) or 1 bag of frozen cauliflower rice
  • 1/4 c. coconut aminos
  • 1/2 c. chopped onions
  • 1-2 cloves of garlic minced (optional)
  • 1/2 c. chopped or grated organic carrots
  • 1/2 c. green peas (optional) or chopped broccoli
  • 1-2 Tbs. of avocado oil, EVOO, or fat of choice
  • sea salt to taste

Directions:

  1. In a large pan over med-high heat, warm 1-2 Tbs. of oil until hot but not smoking.AIP Paleo Chicken Fried Rice is a Quick, Easy & Delicious One Pan Dish that is healthy too! Pack leftovers in a thermos for a hot lunch! www.thehealthnutmama.com
  2. Add chicken & saute until brown 2-4 min.
  3. Transfer to plate
  4. In the same pan add another Tbs or 2 of oil of choice, heat until hot but not smoking.
  5. Add onions & garlic & saute until onions are translucent
  6. Add cauliflower & veggies of choice, sea salt & coconut aminos
  7. Add back chicken & saute until veggies & chicken are done about 10-12 min.
